Was just auditing the Blu-ray version of Con Air (786936736267) and noticed they changed David Chappelle's credit from David (as seen on my DVD [717951000262] copy) to Dave. 

The change may have occurred with some release prior to the BD version but it shows we can't assume anything.

Hopefully this is an exception.

I find it fascinating that a distributor would go to the trouble and incur the cost to change a credit for a different DVD release.  Unlike Skip, I don't hate Hollywood -- but the do puzzle me ofttimes.

True.  I have several versions of Hercules and Hercules Unchained.  Some of them have long, detailed credits, and some only credit the top-billed actors and the director.  So I profiled the long, detailed ones first, and then brought them over and converted most of the cast to "uncredited" for the short version, citing the longer credits as my source for all the uncrediteds, and it went through fine.

It's more likely a simple case of a different print being used for the master. It could have been a case of a typo being noticed in one print, so the credits were amended for subsequent prints and different ones were used.
Very often at work we would notice errors in a programme during transmission and would correct them before the programme got repeated. And as the TV stations are loathe to release master tapes, very often a duplicate set would be created instead of replacing the originals.
