I had used Cucusoft iPhone Backup Software to extractor backup data ,which is really trustworthy. So, you can try this.

In my opinion , the iTunes backup or Android phone backup files can provide us with great convenience,especially after the loss of phone data,

Before extracting data from iTunes Backup, the very first that you have to make sure is that you have created a backup with iTunes one day in the past accidentally.

Since you had backed up your data, I think this iOS Data Backup & Restore would be a nice choice for you to restore or backup your data on Windows or Mac.
And if you just want to recover on your iPhone you could go for iOS Data Recovery.

Actually using a professional iOS data recovery software such as TunesKit iPhone Data Recovery is also a useful way to recover iTunes backup and it offers a chance for you to recover any files you want selectively. Maybe you can have a try.
