Though it's possible to recover from iTunes backup directly in iTunes, you will easily get all current iPhone data replaced with the chosen backup file. However, if you just restore it for a new iPhone, you can do it. The better way to avoid this situation and have the freedom to selectively preview or choose, an iPhone data recovery for Windows or Mac can help. It also works to extract from an encrypted iTunes backup, so you can have a look.
